Features

The quality of Pecorino Sardo PDO is guaranteed by the specific procedures laid down for the production of PDOs and the presence of the mark on the label. From a very ancient tradition, it is produced with milk exclusively from Sardinian farms. To date, it is recognized as one of the most representative cheeses in Sardinia's dairy scene. Pecorino Sardo D.O.P. has unmistakable organoleptic characteristics, both in its mild and mature versions. Pecorino Sardo D.O.P. Dolce has a minimum maturation period of 20 days. This ripening period gives it a delicate, aromatic and slightly acidic taste. This cheese lends itself to the creation of numerous recipes, in the preparation of first courses and dressings. Delicious to consume on its own, being a mild cheese with a sour taste, it pairs well with acacia honey or Sardinian strawberry tree honey. Also excellent accompanied by citrus jams, especially lemon jam. It is perfectly appreciated with a wine of good freshness and flavor persistence such as Vermentino di Sardegna Doc, Vernaccia Doc di Oristano or Moscato passito.
