Features

The quality of Pecorino Sardo PDO is guaranteed by the specific procedures laid down for the production of PDOs and the presence of the mark on the label. From a very ancient tradition, it is produced with milk exclusively from Sardinian farms. To date, it is recognized as one of the most representative cheeses in Sardinia's dairy scene. Pecorino Sardo D.O.P. has unmistakable organoleptic characteristics, both in its mild and mature versions. Pecorino Sardo D.O.P. Maturo has a minimum maturation period of 60 days.  This ripening period gives it a strong and pleasantly spicy taste, which intensifies as the ripening process progresses. With an intense and fragrant flavor, Pecorino Sardo DOP is a table cheese to accompany with carasau bread and cured meats or as a pairing with a fig jam to balance the explosion of flavor on the palate. It is also a very valuable ingredient for preparing pasta dishes: from pecorino risotto and asparagus to malloreddus alla campidanese. It is perfect paired with a full-bodied but not overly tannic wine such as Monica di Sardegna DOC or Carignano del Sulcis rosé.
