Fiore Sardo D.O.P. represents the oldest pecorino cheese in Sardinia, dating back to the Bronze Age. The production, which requires craftsmanship and painstaking attention, is made from milk sourced exclusively from Sardinian farms and involves processing raw sheep's milk. Quality is guaranteed by the specific procedures laid down for PDO production and the presence of the stamp on each shape.
The minimum aging period is 105 days, which gives the cheese a hard, grainy texture.
The strong flavor, slightly salty and with a piquant note-particularly in the more mature cheeses-makes Fiore Sardo D.O.P. an excellent table cheese. Delicious on its own, served in wedges (or flakes, depending on ripeness) it is recommended to be paired with a pear or apricot jam that balances the more or less intense piquant flavor depending on the degree of ripeness of the cheese.
For a tasty and flavorful condiment, we recommend grating it to flavor pasta dishes and salads. If you intend to enhance the aromatic intensity of the Fiore Sardo D. O. P. the best match is a good red wine, structured and persistent such as Cannonau.
